There are many opinions online about what the Santa Maria cooking style is, but the one that everyone agrees on is this: it is open-pit grilling over hardwood – the meat is placed on a grill which is raised and lowered depending on your level of heat that you want. The optional aspects of Santa Maria style include what ingredients are in the marinade or dry rub and what type of wood must be used.
