  1. When doing a smoked trip top do you prefer to use the firebox to smoked the tri tip or the grill putting the roast on indirect heat. I happen to own the same style grill that I saw in your videos. Professional Char Griller with side firebox. Keep up the great job with this website.

    1. I have used both methods, but the one I have done longer (and still prefer) is the putting the roast on the grill with indirect heat. For the video, this was at a friend’s house – my smoker does not have the offset firebox. Everyone finds their preference based on results, comfort level, etc…

  2. While visiting the San Diego area last August I stopped in a little market in Cardiff by the Sea and bought what locals refer to as “Cardiff Crack”. Had a break in the weather here in Idaho and thought I’d fire up the grill. Looking forward to this Tri-Tip. Ever try this one?

    1. I have – I used to live in Orange County (currently living in the Sacramento area) – when visiting San Diego once, I had a chance to partake of the Cardiff Crack. SO GOOD.

  3. Yes I have had many O Tri Tip and Cardiff Crack is simply the best. We have it for every major Holiday and family function. I suggest when in SD you try it!!
